šŸŠšŸ„ƒšŸŒ½ A Bold New Old Fashioned — Triple Citrus Simple Syrup (Oleo Method) with Gran Maizal & Campari

Gran Maizal Feature

Gran Maizal: A Legacy in Every Sip

At The Wolfsden, we believe your glass should tell a story—one that takes you beyond flavor to the fields, the hands, and the heritage that brought it there. That’s what Gran Maizal brings to the table.
Ancient Corn, Modern Whisky
Gran Maizal is a corn whisky distilled from ancient varieties native to Mexico’s YucatĆ”n Peninsula—most notably the deeply historic Nal T’eel lineage, one of the oldest recognized by science.
From Farm to Flask
Every ingredient is sourced from small-scale farmers to preserve biodiversity and traditional cultivation methods—ensuring that ancient maize varieties stay economically viable and culturally significant.
Artisanal Distillation Crafted with Purpose
Distilled on-site at Destilerƭa La Vƭbora in MƩrida, YucatƔn, Gran Maizal is carefully crafted using copper pot stills and an in-house proprietary yeast. This method yields a clean yet expressive distillate that captures the true essence of maize.
Terracotta Rest for Authentic Balance
The whisky is then rested in porous handmade terracotta vessels—not oak barrels—to enhance aromatics and preserve the nuanced characteristics of nixtamalized corn. This approach balances wood and grain in a way only terracotta can.
Flavor That Speaks of Place
To finish, Gran Maizal is rested with Papantla vanilla pods and Almendra Blanca cacao nibs, layering gentle floral vanilla and nuanced cocoa bitterness over the natural sweetness of corn—resulting in a symphony of toasted grain, floral, and subtle bitter notes.
A Whisky That Honors Heritage
Gran Maizal isn’t just a spirit—it’s a cultural artifact. Every sip carries five millennia of Mesoamerican maize tradition, transformed through sustainable farming, artisanal distillation, and careful finishing.

🄃 Wolfsden Campari Old Fashioned — Triple Citrus Simple Syrup (Oleo Method)

Ingredients:

Method:

Add whisky and a generous ½ oz of Triple Citrus Syrup to a cocktail shaker.
This syrup isn’t just sweetener—it’s a burst of lemon, lime, and orange oils layered over rich turbinado sugar, giving the Old Fashioned a bright, summer-ready twist.

Fill with ice and shake hard for 10–15 seconds to marry the bold whisky with the vibrant citrus oils.

Double strain into a chilled rocks glass over a crystal-clear ice cube.
Float the Campari gently on top —letting that vivid red sit like a sunset over gold.

Finish with a few dashes of bitters directly on top, adding a spiced edge to the citrus aroma.

Garnish with a dehydrated orange wheel and a Luxardo or cocktail cherry for a final hit of color and texture.

šŸ›  Tools & Reading List for the Serious Home Bar

Bar Tools:

The Oxford Companion to Spirits & Cocktails — At The Wolfsden, we consider this the ultimate reference guide for anyone passionate about drinks. Edited by David Wondrich and packed with contributions from world-class bartenders, historians, and spirits experts, it covers everything from distillation techniques and legendary brands to classic recipes and modern innovations. With over a thousand entries, it’s the definitive encyclopedia of the cocktail world and a cornerstone of our library.

Cocktail Codex — This book is a masterclass in clarity and creativity. Written by the team behind Death & Co., it breaks down every cocktail into six ā€œroot recipesā€ā€”the Old-Fashioned, Martini, Daiquiri, Sidecar, Highball, and Flip. From there, it shows how nearly every drink in existence can be traced back to these foundations. Both an instructional manual and a creative spark, it’s one of the most valuable guides we keep within reach at The Wolfsden.

  • Liquid Intelligence — At The Wolfsden, this book is where science meets the shaker. Written by Dave Arnold, it explores the mechanics behind cocktails—temperature, dilution, carbonation, and even liquid nitrogen—while still offering techniques home bartenders can apply. It’s packed with experiments, recipes, and insights that push the boundaries of what a cocktail can be. For anyone who loves both precision and creativity, and who is not afraid of digging deep into science, this is definite recommended reading.
