Gran Maizal is a corn whisky distilled from ancient varieties native to Mexicoās YucatĆ”n Peninsulaāmost notably the deeply historic Nal Tāeel lineage, one of the oldest recognized by science.
From Farm to Flask
Every ingredient is sourced from small-scale farmers to preserve biodiversity and traditional cultivation methodsāensuring that ancient maize varieties stay economically viable and culturally significant.
Artisanal Distillation Crafted with Purpose
Distilled on-site at DestilerĆa La VĆbora in MĆ©rida, YucatĆ”n, Gran Maizal is carefully crafted using copper pot stills and an in-house proprietary yeast. This method yields a clean yet expressive distillate that captures the true essence of maize.
Terracotta Rest for Authentic Balance
The whisky is then rested in porous handmade terracotta vesselsānot oak barrelsāto enhance aromatics and preserve the nuanced characteristics of nixtamalized corn. This approach balances wood and grain in a way only terracotta can.
Flavor That Speaks of Place
To finish, Gran Maizal is rested with Papantla vanilla pods and Almendra Blanca cacao nibs, layering gentle floral vanilla and nuanced cocoa bitterness over the natural sweetness of cornāresulting in a symphony of toasted grain, floral, and subtle bitter notes.

š„ Wolfsden Campari Old Fashioned ā Triple Citrus Simple Syrup (Oleo Method)

Ingredients:
2 ½ oz Gran Maizal Mexican Corn Whisky
generous ½ oz Triple Citrus Simple Syrup ā made using the Oleo Saccharum method

½ oz Campari
2 dashes Angostura bitters
1 dash orange bitters
Garnish: Dehydrated orange wheel + a Luxardo or cocktail cherry. (if you are investing in a dehydrator for your home bar, you certainly donāt have to get one as big as this one linked above, but it is a beast, for sure.)
Ice: Large clear ice cube
Method:
Add whisky and a generous ½ oz of Triple Citrus Syrup to a cocktail shaker.
This syrup isnāt just sweetenerāitās a burst of lemon, lime, and orange oils layered over rich turbinado sugar, giving the Old Fashioned a bright, summer-ready twist.
Fill with ice and shake hard for 10ā15 seconds to marry the bold whisky with the vibrant citrus oils.
Double strain into a chilled rocks glass over a crystal-clear ice cube.
Float the Campari gently on top āletting that vivid red sit like a sunset over gold.
Finish with a few dashes of bitters directly on top, adding a spiced edge to the citrus aroma.
Garnish with a dehydrated orange wheel and a Luxardo or cocktail cherry for a final hit of color and texture.
